Acetate

Acetate are a functional group in organic chemistry. They are an anion of acetic acid, formed by the donation of a proton. Acetates are the salts and esters of acetic acid. They occur in many biological systems and are important intermediates in metabolism. Acetates are also used in food technology as preservatives and acidity regulators.
